Oven-dried tomatoes do not sound as sexy as sun-dried tomatoes, but you and I both know that we will rather go with the easier method. One thing I can promise you though, once you watch this video your opinion of over-dried tomatoes will change. This video also has a bonus tip: how to preserve oven-dried tomatoes for future use.

The process to make oven-dried tomatoes is easy, and it takes very few ingredients. Choose medium or small-size tomatoes, preferably all the same size, and cut in half. Keep a sheet of parchment paper on a baking tray and evenly cover it with tomato halves.

Then sprinkle salt and olive oil on the tomatoes, and optionally even a herb of your choice. Dry the tomatoes in the oven at 120 degrees Celsius for as long as it takes for the tomatoes to dry. Keep checking every once in a while so that the tomatoes do not burn and the accumulated moisture in the oven can escape. The process should take between 2 and 4 hours.

Preserve in olive oil as per the method shown in the video. These oven-dried tomatoes will lift the flavor of any pizza, salad, or sandwich.
